ONE YEAR!!! It is amazing what you can accomplish when you set your mind to do something. One year ago today, I quit smoking. It did not even dawn on me that it had been a year, until I stopped by the gas station today to get cigarettes for my husband. I normally do not do this, but he asked me to. I was chatting with the attendant, and I mentioned that it had almost been a year since I quit. At that point I realized that today was the 6th. HOLY MOLY…it has been officially ONE YEAR since I quit! I was also shocked by the price. $7 a pack! It was around $5 last year when I quit, and I thought THAT was crazy! Speaking of crazy. Besides the fact that I had been eating healthy for six months, I was still bound to my addiction of 20 years. I have no idea how many times I said, “I am going to quit today”, and it just never happened. Well, this time…I had finally had enough! I realized I had to find something that would motivate ME to quit. I had tried different avenues in the past, such as “Look at all the money I will save”, or “I will feel so much better, and not be hacking up a lung every day“. However, nothing really stuck with me deep down inside, and in my heart, until I read about the American Heart Association 5k race that would be held April 14, 2012.
My main motivation for eating healthier was due to the fact that I watched my father die of congestive heart failure in the hospital, and I had learned (by watching Forks Over Knives) that by living a plant-based lifestyle, I could stop, prevent, and even reverse heart disease. I knew I was headed down the same path as my father, because I used to eat fast food three times a day at a minimum, along with all the other unhealthy junk I was putting in my body. About a week or two before my dad passed away, I distinctly remember my dad looking at me and saying, “I can’t do this anymore, I do not want to be here anymore”. Really?? My dad had given up hope. After being in the hospital exactly a month, my dad finally lost his fight. I am in tears right now thinking about it, because I was NOT ready to lose my dad, and I was NOT ready to give up, and was STILL READY TO FIGHT! However, I did not know any better, and had no clue how to help him. I assumed that if he was in the hospital, he would get better. WRONG…he got worse, and died. That is a whole other blog, I will get into that some other time. Yes, my dad made a lot of choices in his life (the same as I did) that led him where it did. We all know that smoking is bad for you. We all know that fast food is not healthy, blah blah blah. But there is so much more information out there that we are NOT told about, that could have possibly saved his life, if given the opportunity. I was fortunate enough to have stumbled across this life-changing plant-based lifestyle, and if I had not lost my dad the way I did, who knows if I would have made the same decision to live this lifestyle. I might still be scarfing down cheeseburgers and fries. I am so grateful that I watched Forks Over Knives, and decided to make that change, because I have never felt more healthy, and alive in my entire life. I will be celebrating my 40th birthday in August, and I am happy to say that I literally feel like I am a teenager again.
Anyway, back to what I was saying about finding the motivation to quit smoking. I finally found it! The American Heart Association 5k race. I was running this for my DADDY, and what better way to quit smoking, than to RUN! I had five weeks to train for this race. Train?? Ha Ha…Are you kidding me? My first jog, I was able to run two blocks, then I had to stop and catch my breath. However, I DID NOT give up. I was NOT GIVING UP ON MY FIGHT! My fight was to kick those cigarettes to the curb, and run this race for my dad. I had to tell myself every second I wanted to light up a cigarette, “NO!! YOU have control over this. YOU have a race to run for dad. YOU have to prove to yourself that you can do this”. Each day, I ended up running a little bit further. I walked for a bit, then ran for a bit, and so on. I did not miss a single day of training. I ran 4 – 5 days a week, regardless if my mind said different. I had to re-train my MIND, that I could achieve anything I set my mind to. April 14th arrived, and I ran in the pouring down rain (thanks Dad, lol). I think he did that on purpose, just to make sure I meant what I said, and that I was truly doing this for ME and HIM! I ran my butt off that day, and finished 3.10 miles, in just under 30 minutes. WOO HOO…I DID IT! Not only did I finish that race (in record time compared to the five weeks earlier of only being able to run two blocks), but I had gone five weeks without a cigarette, and I felt amazing!
Thank you DAD for helping me believe in myself, and giving me the motivation to quick smoking. Because of YOU, I have my life back. Not a day will go by that I do not miss you, and wish I could hug you, and hear your infectious laugh and witness that joyous smile. I feel you in my heart every day, and I am so thankful I was able to spend 33 years with you. You taught me about being strong, and fighting until the very end. I PROMISE you, I will FIGHT until the very end, and help spread the word to as many people who will listen, about living a healthy, plant-based lifestyle. Maybe we can save another son or daughter from going through the same.
A month from today, I plan on running my first half marathon. WOW, if you would have told me a year ago I would be running a half marathon, I would have laughed in your face. The good news is, there is a NEW LAURA BLACK now, and she says “BRING IT…April 6th will be a glorious day”! I also plan on running the American Heart Association race again this year. Heck, I have decided to run two half marathons, and two 5k’s next month. Why not? If you set your mind to something, YOU CAN DO IT!! I am proof

Dreena’s newest book LTEV, has been another fantastic staple in my kitchen. There are many delicious, healthy, and FUN recipes included in her cookbook. Who is Dreena Burton, you ask? She is the author of four vegan cookbooks, and mom to three plant-powered girls! Always passionate about creating nutritious recipes, she is an advocate of using the “plant-based basics” (beans, nuts, seeds, whole-grains, fruits and vegetables) to create dishes that are healthy -but also very satisfying and delicious! Dreena has been vegan since ’95, when little was known about eating and cooking vegan. Not long after graduating with her business degree and working in the marketing field, Dreena followed her true passion of creating recipes.
The Everyday Vegan was her first project, following her father-in-law’s heart attack. Dreena knew there was information needing to be shared – most importantly, how and what to eat as a vegan. After having her first child, she wrote Vive le Vegan!,
which represented her journey as a mom, and more wholesome, easy recipes. Then came
eat, drink & be vegan, a celebratory vegan cookbook, which became very popular for its entire chapter on hummus, as well as inventive flavor combinations and a mix of wheat-free and gluten-free recipes.
Dreena has written for VegNews and alive magazines, True/Slant, and has been featured in other publications including First magazine. She has won several blog awards including VegNews VegBloggy and Vancouver’s Ultimate Mom Blog. Her “Homestyle Chocolate Chip Cookies” has become a signature recipe, and its YouTube cooking video has received over 200,000 views. More recently, Dreena’s “Frosted B-raw-nies” recipe won the Everyday Health Gluten-Free Recipe Contest (February 2011).
Dreena’s newest book, Let Them Eat Vegan: 200 Deliciously Satisfying Plant-Powered Recipes for the Whole Family (2012) represents an evolution in vegan cooking. Dreena utilizes her experience cooking with the ‘vegan basics’ – beans, nuts, seeds, whole-grains and whole-grain products, vegetables and fruits – to bring delicious, wholesome vegan meals, snacks, and treats to the table for everyday plant-powered eating. No white flour, no white sugar, and also no vegan substitutes like vegan cream cheese, sour cream, or vegan meat. And, these recipes are wheat-free and largely gluten-free, and a sprinkling of raw delights for good measure.
One of my favorite quotes from the book (pg xvi):
Eating vegan is about so much more than not eating animal foods. We know the importance of choosing whole plant foods, and largely organic and local foods, over highly processed foods. That’s the health power of a plant-based diet. Eating a whole-foods vegan diet -with respect for lower-fat recipes featuring colorful, nutrient-dense vegetables and fruit, whole grains, beans, nuts, and seeds -is where it’s at. These foods are the basics for delicious, nourishing, and, satisfying meals for everyone at the table -from the pickiest toddler (trust me on this one) to the green smoothie-drinking spouse (trust me on this one, too). When we focus our diet on plant-power, we feel better, look better, and want to do better. Before long, we find ourselves getting hooked on healthy foods. And why wouldn’t we? When they taste delicious, make us feel good, improve our overall health and are cruelty free -what’s not to love?
Dreena is telling it exactly like it is, trust her!! Take me for example. I used to eat fast food at least three times a day (note: fast-food junkie). NOW, I crave all of these unbelievably tasty, healthy foods (note: plant-based junkie). I have learned that by living a whole-foods, plant-based lifestyle (17 months, now), my body literally thanks me everyday. I enjoy no longer getting headaches on a daily basis, no longer having tummy issues, and no longer getting sick and having to go to my doctor for antibiotics. I am thrilled to finally have energy, healthy skin, hair, and nails, to eat until I am full and satisfied, and be able to maintain my ideal weight. I could be here all day shouting to the world ALL OF THE AMAZING BENEFITS of living this lifestyle. It is not just about the health benefits, but also about having compassion for the animals that are no longer on my plate.
I also used to plop my butt on the couch every night and shovel potato chips and cottage cheese down my throat while watching TV. Since I began my plant-based journey, I cannot even remember the last time I watched TV, because I actually have the energy now to go for runs when I get home (note: training for my first half marathon). YOU CAN DO IT! Trust ME, once you get sick and tired, of being sick and tired….YOU WILL WANT TO DO IT! I have no regrets, and will NEVER go back to being a fast-food junkie. I am a PROUD Plant-Based Junkie, and I am never looking back. Dreena’s book gives you tips, techniques, notes, along with food preparations for packed lunches, baking tips, how to select, prep, and include more greens in your meals, I could go on and on. This book is jammed packed with delicious recipes, as well as a wealth of information to answer all of your questions.
Speaking of delicious recipes. Two of my favorite recipes from this amazing book, is the No-Fu Love Loaf (pg 112-113), and the VegVeeta Dip (pg 67). Many vegan versions of meatloaf are made with tofu, veggie ground round, tvp, or even seitan. Those tofu-averse will be happy to know there is no tofu or veggie meats in this loaf. This savory version uses only lentils, cracked wheat, oats, and chia seed, along with a mix of seasonings to make it all magically come together! This loaf can be made wheat and gluten-free. The VegVeeta Dip (pg 67) is another favorite of ours! It is wheat-free, gluten-free, soy-free (for those that have issues with those). This warm ‘cheesy’ dip has a mild flavor that can be used to accompany many foods… and also combines very well with salsa to mimic the velveeta/salsa dip from years ago. Frank and I love to pour this over our taco salads, burritos, nachos, potatoes, well…pretty much anything, lol! CLICK HERE to give it a try! Your taste buds will not regret it

Not only was Dreena nice enough to take time out of her busy schedule to answer some of our questions, which we are sharing with you today, she will also be chatting with the PBJ family LIVE on our PBJ show, Sunday March 3rd. PBJ: What would you like to share with those thinking about starting a plant-based diet, but are frightened or unsure if they will be able to succeed?
Dreena: First, don’t doubt your ability to make these changes. If it is important to you, you can do it! We all prioritize things in our lives, make this one of your priorities. And, second, I often tell people “start with what you know”. Rather than be overwhelmed by trying all kinds of new foods and recipes, start with the vegan foods you already love, for example brown rice, sweet potatoes, quinoa, bean stews and chilis, avocado… and build from there. If you really love sweet potatoes, build a meal around them, maybe try a new stew that features them as the main ingredients but adds some new spices, flavors, or ingredients to you. Work with the building blocks that are already familiar and comfortable for you, and gradually push out of that comfort zone with new recipes and foods. (And, generally, you will be more successful giving new vegan recipes a go rather than trying to ‘veganize‘ all of your old favorites!) There are SO many resources available now to help you, truly you can do it.
PBJ: Was there an event in your life that persuaded you to make the transition to a plant-based lifestyle?
Dreena: I first became vegetarian, then moved into eating vegan. My ‘trigger’ to becoming vegetarian was when my sister read an article about how red meat can remain in your intestines for years. I was a teenager, and that got me thinking and reading – and eventually changing. It was a process for sure, and I talk more about that on my blog here.
PBJ: What is one of your favorite recipes from your book, Let them Eat Vegan?
Dreena: Oooh. I have so many! Some of my favorites savory items are (in no particular order!): Kale-Slaw with Curried Almond Dressing, Wonder Bean Puree, Jerk Chickpeas, Mac Oh-Geez, Mediterranean Bean Burgers, Nutty Veggie Burgers, Vegveeta Dip, Moroccan Bean Stew with Sweet Potatoes, Mexican Bean Stew with Chipotle Avocado Cream, and Artichoke and White Bean Dip. For baked goods and sweets (again, so many!): Whole-Grain Chia Pancakes, Berry Patch Brownies, Cocoa Cookie Dough Balls, Raw Chocolate Dream Mousse Pies, Pumpkin Pie Custards, Award-Winning Frosted B-raw-nies, Gingery Cookies, Gluten-Free Apple Pie, Banana Butter Pie (using nut butter, not margarine!), and Chai Peanut Butter Ice Cream. See, told you it’s tough to answer! Many of these recipes are on my site if you want to take a looky-loo!
PBJ: What is your response to those folks that say they could never give up their meat, dairy, or processed foods? I used to be one of those people. My response used to be, “No cheese…are you crazy?” Also, any suggestions for those that say they are not big fruit or veggie lovers?
Dreena: We aren’t ‘giving up‘ foods, we are gaining better, healthier – and yes, even tastier – foods! And, once I learned the health problems associated with meat and dairy consumption, it became important to me to make changes for me, and also later for my family. Again, that goes back to priorities. Preparing healthy food for my children is as much a priority as their schooling and activities. Indeed, it fuels their bodies for optimal performance in athletics and also academic pursuits.
PBJ: What has been your most rewarding benefit from living this lifestyle?
Dreena: Twofold. First, seeing the abundant health that my children enjoy. They have bright, vibrant eyes and glowing skin and strong immune systems. Their energy is steady and full, but not spiked as with sugar rushes. And, then, hearing from others that write to tell me that one or more recipes helped change their lives, that it actually helped them on their path to eating a healthier, more compassionate diet permanently. That is a big deal, and I am always so appreciative to hear that kind of thing from a reader – it motivates me to continue with my work.
PBJ: What has been your biggest kitchen mishap/blooper?
Dreena: Oh dear, I’ve had quite a few. I’ve burned a cookbook (not my own, I guess that would be bad luck)! I placed it on one of the elements on the stove not realizing the element was heated on low, and I scorched the cover – thankfully no fire. And, I have burned out many motors on immersion blenders, have blown out a blender with green smoothie firing through the kitchen… and more. All in a day’s work.

Who is Julieanna Hever?

THE BOOK -The Complete Idiot’s Guide to Plant-Based Nutrition
A growing number of physicians advocate a completely plant-based diet for many of their patients who suffer from diabetes, heart disease, and cancer.
In The Complete Idiot’s Guide to Plant-Based Nutrition, readers will find:

I know I have said this before, but this book is my Plant-Based Bible. Julieanna’s book also includes delicious recipes, which include: smoothies, breakfast goodies like blueberry banana pancakes, dressings, dinner meals like my favorite beans and greens chili, tasty snacks such as simply hummus, to scrumptious sweets that includes Chef AJ’s Outrageous Brownies and unclassic oatmeal raisin cookies, to name a few. She was also nice enough to even include some sample meal plans, nutrition charts, and a long list of resources to include: informational books, plant-based cookbooks, nutrition and health information, and even where to order food products.
I cannot sing enough praise about this book, as it has now been 17 months since I began my plant-based journey, and this book has been there for me every step of the way. I refer to it on a frequent basis regarding questions I receive about carbs, protein, dairy, vitamins, minerals, supplements, plant-based pregnancy, kids, seniors, athletes, weight loss, dodging diseases with diet, plant-based substitutions (how do I cook without eggs, what do I drink instead of dairy milk, what “meat” options are available, is there a substitute for cheese?)…I could go on and on. Julieanna touches on all of these subjects, and many more in her book. Again, I cannot recommend this book enough to EVERYONE. It is not just for newbies to this lifestyle, it is definitely for everyone. We ALL can benefit tremendously from this book.

I hope you enjoy your book, as much as I do mine!!

Lani Muelrath has hit the nail on the head with her new book, Fit Quickies: 5 Minute Targeted Body Shaping Workouts. I am in awe of all of the detailed information she has included for her readers regarding her three pillars of successful body transformation: Exercise, Diet, and Mind-set. “When you get all three in alignment, you’re unstoppable…”
For me personally, I began my whole-food, plant-based lifestyle a little over a year ago, and this book touches on so many points that will help me even further with this lifestyle. Lani simplifies matters, in which I was making difficult, which did not need to be. As you will see below, I commented on each of her three pillars of success. Each subject has made a tremendous impact in my life.
Here are more details for you along with some of my favorite quotes from the book.
Exercise:
You might be thinking it is a book about 5 minutes exercises. Well, you are correct about the quick exercises, however they are not just any exercise. Each one focuses on Lani’s core principles, and those principles are paired with specific actions, such as: Position, Anchors, Isolation, and Repetitions. Lani also speaks of all of the amazing benefits of exercise, and how much exercise we really need. Also gives great examples of setting long, and short-term goals in order to succeed.
I also enjoyed the explanation of why too much sitting is hazardous to our health. My full-time job includes sitting all day, so this raised a red flag for me. This section clearly states the solution to this issue. Pretty simple…STAND UP! I could stand rather than sit during some of the phone calls, or take a short walk with every water break. She gave examples of many ways to tackle the dilemma of sitting.
Lani lists out in detail 14 Fit Quickies. Yep, you heard me…Fourteen!! All of the them can be completed in 5 minutes or less. Each Fit Quickie covers the following: the problem, the facts, the fit quickie fix, how to do it (which includes position, anchors, isolation, and repetitions), stretching, common errors, and tips and modifications. The Fit Quickies covers our entire body. I am going to benefit from all of them, but the one I was really drawn to was Fit Quickie #11, Upper-Body SOS. The goal/results are the strengthen the muscles of your upper body and core, lift your bust line, improve your posture; improve your shoulder stability. I notice myself slouching all of the time, so I am really enjoying this exercise. Another favorite is Fit Quickie #8, Tush Tighteners. Enough said
I am so thankful Lani took the time to outline each Fit Quickie in an easy-to-follow manner, in addition to covering all areas of our bodies that can be re-created and re-shaped in five minutes or less. She also made sure to include some Fit Quickie Routines so we can incorporate them into our day or current workout rotations. She is truly a genius!!
In regards to the fitness section in Lani’s book, I was never one to exercise…EVER!! It wasn’t until six months into my plant-based lifestyle, that I made the decision to quit smoking, which happens to be March 6th, 2012. Yes, I realize that I was eating healthier, but still smoking. But, it was an addiction, and my mind-set was not quite in the right place yet to tackle that subject. Well, I had finally made up my mind that I was GOING TO QUIT, and that I would run in a 5k race that was for the American Heart Assoc. For those of you who do not know me, my father passed away seven years ago of congestive heart failure, so this race meant the world to me. I had to find something that would keep me motivated to quit smoking. I truly wanted to quit, but the addiction was a hard battle to get over. I had to make up my mind that I COULD DO THIS. My health was worth it. So, I began training for the race, and within that first week, I quit smoking. As I had hoped, running and smoking did not go hand in hand. It made it easier to give up that bad habit, when I had a goal in front of me.
My point being, due to my determination to quit smoking, I began to exercise. Plus the fact that because I was eating healthier, I actually had the energy, and was able to do it. In the beginning, I could only jog a couple of blocks, but would walk for a bit and get my breath back, and then jog another couple of blocks. I also noticed that my energy level continued to improve, and that my lower back actually stopped hurting, because like Lani mentioned, I was moving my body. The more I exercised, the better I felt. March 6th will be my one year anniversary of quitting smoking, as well as my new adventure with exercising. I am excited to add in the Fit Quickies to my training. I am currently training to run my first half marathon in April. I ran my first 5k last April, so it is exciting to see the improvements exercising has truly made in my running.
Thank you Lani, for providing me with the appropriate steps, and tools required to continue my excercise regimen. I thought running would be enough exercise, but your targeted exercises are already making huge improvements in my running.
Diet:
Lani shares her journey with us, and helps us realize that we are not alone. She shares how she battled with weight loss, and her ups and downs in finding the foundation of healthy living. The guiding principles are whole, low-fat, plant-based foods. Her plant-based diet is organized around five food groups: Veggies, Starchies, Fruit, Beans, Nuts and seeds. She outlines what her plate looks like throughout her day, by giving examples of what she eats, which are very simple, non-complex meals, which consists of the five food groups.
She explains how much our bodies normally need from each food group, without having to count calories. I love her phrase: “Full without being fat”. I have learned that as long as I eat the five food groups, and keep my plate balanced, based on the necessary servings, and eat when I am hungry, that I in fact can be full without being fat. I have maintained my weight for over a year now, and life could not be simpler when it comes to eating this way, I also appreciate that she also reviews how to deal with food cravings, and letting us in on the secrets for success.
Like I mentioned earlier, I began my plant-based lifestyle late September, 2011, so I feel like I am finally figuring out my health. I recently had my blood work done in January, and I was very pleased with the results. CLICK HERE if you would like to take a peek at my numbers. However, after reading Fit Quickies, I learned quite a few new things. Side note: this book is great for everyone!!
I never really struggled with weight loss, so I thought. After I began my plant-based lifestyle, the weight started to steadily drop. I lost over 30 lbs from the heaviest I ever weighed, which was in 2008. Apparently I needed to lose some weight, lol. Another side note: my husband, Frank lost 80 lbs, got off his blood pressure medicine, and his psoriatic arthritis diminished. I am happy to say that I have maintained my weight for over a year, and that is all thanks to a plant-based lifestyle.
So when I read Fit Quickies, I could totally relate to many of the points Lani touched on, regarding this lifestyle. I ate every time I got hungry, and I always ate until I was full. Lani points this simple idea out on page 204. It makes a huge difference when you put real foods into your body, as opposed to fast food three times a day, as in my previous life. I say previous life, because I truly feel like a new person. I am a completely different person, inside and out.
One of Lani’s secrets for success entails “Always Be Prepared.” This could not be more true. It makes a huge difference when I have meals ready in the fridge, that way I can grab something healthy, as opposed to feeling the need to go get something unhealthy just because it is “quick”. I always have fruit and veggies to munch on at work, as well as at home.
One thing I am going to try to eat more of, that Lani mentions is “starchies”. “Remember the role starchies play in hunger satisfaction and the long-term satiety that your goal of being well fed without fat demands.” I love sweet potatoes, squash, and beans, and these items will fill me up and satisfy me. This is one area that I could improve on.
Mind-Set:
Lani gives great examples of the common “challenges” the majority of us experience in regards to health, fitness, and weight-loss. Page 232 hit home: “You can have the best exercise and diet plans in the world, but if you don’t use them to your benefit, they’re worthless. The way I see it, there are two main problems here: staying motivated and getting out of your own way. The allure of a better body gets you ramped up for change, only to fizzle with the early obstacles that kick you out of a new, healthy groove. Or you start to have some measure of success, only to find old, familiar habits hijacking your progress. Or maybe you’re doing fine on the new plan and you just get bored. Where’s that part of you that knows how to follow through?”
This is when Lani focuses on how we can change our mind, body, and life, as well as our choices, habits, lifestyle, and destiny. Page 234: “How can you expect to stay motivated when you’re unclear about what you want in the first place?” Find out your “what and why!” Lani spends a lot of time helping us understand why mind-set is so important, and how it ties into the three pillars of success.
One of the aspects I got a chuckle from, and it also stuck with me, was on page 241: The “What the Hell” Effect. “When you set huge goals for yourself, expecting 24-hour turnaround to a new you, you set yourself up to fail. You can’t become a completely transformed person overnight. When you trip up or fall short, even in a small way, you figure “Oh, what the hell. I’m never going to change. I broke my diet. It’s all over so I might as well go back to the way things were.” Setting smaller, specific goals and steps to inch you forward, as well as having compassion for yourself when you do slip up, pacifies those occasions you don’t quite reach your goal those times when your actions come up against the voice that has your better interests at heart. Respecting both of these drives with compassion for yourself disarms the agents of self-destruction.”
Mind-set is an area we ALL could improve on. I definitely would not have come as far as I have with living a plant-based lifestyle, if my frame of mind was not in the right place. I made the choice to get out my comfort zone of eating fast food every day, and eating a bag of lays potato chips and cottage cheese every night while sitting in front of the TV. In my mind, I HAD TO CHANGE, FOR MY HEALTH! Over the last 16 months, I think I have sat in front of the TV a handful of times. I made a conscious effort to change my old habits, and make new ones that were better for my well-being. I literally changed my habits, lifestyle, and destiny, as Lani points out, I created NEW habits, and began my new journey (lifestyle). Lani states, “If you want something different from what you’ve been getting, you need to do something different.” I will leave you this last quote from this fabulous book, “You must change your mind before you can change your body. You control your flight plan.” That is exactly what I did, without realizing it.
Honestly, I will continue to re-read this book, as it is so insightful, and full of life-changing information. Do yourself a favor, and go get your copy today!! You will NOT regret it. Thank you Lani, for providing with me a copy, as I will keep it on hand at all times. Your wit, charm, experience, knowledge, expertise, and compassion are duly noted. Thank you for writing not just a 5-minute targeted body-shaping workout book, but for including the other two critical pillars of success, the food, and frame of mind. This book is exceptional on so many levels, and it has taught me so much about myself, as well as given me to tools, and education necessary to succeed in life.

Who is rockin’ this Plant-Based Lifestyle??

I normally do not do this, but I am totally going to toot my own horn today!
(better than the alternative, which is just…tooting, lol).
Anyway, I had my yearly physical on Tuesday, 1/8/13, and this year I had extra blood work done that I did not realize I should have done last year. (last year I was only 6 months old, plant-based). Keep in mind, the only pill or medication I have taken in 16 months, has been my thyroid pill, in which I have to take daily for the rest of my life (I explain in detail a little further down). I have not had to take a pill for a headache (because I haven’t had one), allergy/sinuses (GONE), colds/flu’s (NADA, doesn’t mean it will not happen…but NONE as of yet), stomach aches/constipation (used to have this all of the time), blood pressure, cholesterol, I could go on and on.
Here is the blood work I had done: Lipids, CBC, Vitamin D, MMA (B12), and Thyroid. This info was read to me over the phone, by the nurse…so hopefully I did not miss anything.

I have my thyroid checked every 6 months, because I do not have a thyroid. 8 years ago, I was diagnosed with graves disease, which is hyperthyroidism. To correct the “problem”, they had me ingest a radioactive iodine pill, to basically kill the production of my thyroid, and then put me on thyroid medicine that I would then need to take the rest of my life…hmmm…looking back now, not sure if that was probably the best option for me. Looking at my “diet” back then, it is no wonder I had a problem. Anyway, damage is done…and I live with it everyday.
My struggle however, has to do with my “levels”, and what the doctors consider normal, and what I consider normal. But, I am still working on that issue. About 9 months ago, I didn’t quite feel right, and I asked the doctor to change my dosage of my thyroid medicine. After we argued for a while, he finally agreed to my request. Well, I am going to be the FIRST to admit…I WAS WRONG. My thyroid level went from nearly zero (which Normal is usually between 0 and 5, or 0 and 3 depending on doctor) to over 7. I used to be around 3 when I was on a certain dosage, so I asked him to change it back to that dosage. Well, he did…and NOW, my TSH Level is too high. This will continue to be an issue for me, but I am still learning about it, and hopefully I will feel normal again. So here is the results:
I am soooo excited, I just cannot hide it. My lipid and CBC results are ALL thanks to my PLANT-BASED LIFESTYLE. I am proof that you DO NOT need to worry about getting enough calcium, protein, vitamins, minerals, etc…when eating a whole foods, plant-based diet.
FOOD IS OUR MEDICINE!!
I am going to keep this positive, and just tell you that I feel absolutely amazing, and blessed to have stumbled upon this lifestyle. I do not judge others on what they eat or do not eat. I am just sharing MY STORY with you, of how eating a whole food, plant-based diet has saved, and changed MY LIFE! I was sick and tired of being sick and tired. NO MORE!!
After watching Forks over Knives, I knew at that moment that something needed to change. That change was ME. I made up MY MIND, that I was going to give it a shot. Do not doubt if you can do this, because I DID IT (and so can YOU), and I had every excuse in the book.
Excuse #1 ~I did not have a lot of money.
(We still do not have a lot of money, and I make some pretty darn delicious meals…this way of life does NOT have to be expensive)
Excuse #2 ~I did not like most vegetables.
(I snuck them into my soups, and other dishes…now I LOVE almost all of the vegetables I used to despise. My taste buds changed and no longer crave the unhealthy foods, they crave the healthy ones).
Excuse #3 ~I did not have a clue what I was about to get myself into.
(Trust me, I am still learning…give it a shot…you will NOT REGRET IT).
Excuse #4 ~I loved my animal products, processed foods, and most of all I loved my fast food joints (3 times a day to be exact).
(OMG…I cannot believe I even uttered those words. I will never eat those foods again. LET ME REPEAT…I WILL NEVER EAT THOSE FOODS AGAIN. I have absolutely NO DESIRE or CRAVINGS for them now).
I conquered all of these “excuses” and many more, because I believed in myself and never gave up. I was NOT going to back down anymore, regarding my health. I REFUSE to die of heart disease, like my father, two uncles, and many friends. I REFUSE to die of cancer, like two of my aunts and many friends. I REFUSE to die of diabetes, like many of my friends. I could go on and on. I would like to think, that if given the choice, and the information of how a plant-based lifestyle could have “saved their lives”, I would most certainly hope they would have chosen LIFE.
I miss my dad more than anything, and would give anything to have him back just for a quick hug and to tell him I loved him. My dad may not have chosen this lifestyle if given the opportunity (we will never know now), but he was NEVER given the choice or information. My mission is to let others know their “choices”, and to share this information with them.
If you are reading this, I BEG of you to watch Forks over Knives, and to also read The China Study! Hopefully, you will “thank me” later. I am beyond passionate about sharing this info, and my story to everyone that will listen to it, or read it. My heart becomes so heavy when I hear of another daughter or son losing a parent to a preventable illness (especially heart disease). I promise you I will continue to share this life changing info for as long as I am upright and breathing. Thank you for taking the time to read this. I wish you ALL a long, healthy life!

Lani created and starred in her own CBS TV show, “Lani’s All-Heart Aerobics.” Recipient of the Golden Apple Award for Excellence in Instruction, she regularly speaks and writes about healthy living, plant-based nutrition, weight loss, and fitness. Here is my interview with the lovely, and knowledgeable Lani Muelrath:
PBJ: Who is Lani Muelrath, the plant-based based fitness expert? What do you stand for, and how would you like to be “remembered”?
Lani: I would like to be remembered as having made a difference in people’s lives by impacting their health and their consciousness about food. That I somehow helped release them from the bondage of an unhealthy body AND brought them also to a place of happiness and peace in their relationship with food, eating, and their body. Having sharpened the tools to totally change that for myself, I’m inspired to carry the message to whoever wants to hear it and get it for themselves.
PBJ: Was there an event in your life that persuaded you to make the transition to a plant-based lifestyle?
Lani: Multiple events! I became a vegetarian many years ago – 39 now – and my reasons were then as they are now: for humanitarian, health, and environmental reasons. Even then, there was lots of information available to the public about the impact of animal foods in the diet, which made it a no-brainer choice for me to adopt a vegetarian diet. These reasons are more compelling now than they ever have been.
Then a few years ago, after intermittent stops and starts, I also ditched dairy products as the last holdout in my veggie diet. For years, I would wince when driving past the cows in the fields at the dairy ranches that I passed on the drive to the school where I taught each day. And during the times when I was not eating dairy, my conscience was a whole lot clearer. I can point out 3 specific events that resulted in the jump: something my friend Colleen Patrick-Goudreau (the Compassionate Cook) said, Dr. McDougall’s physician seminar that I was invited to attend (there’s a passage about this in the Fit Quickies book) and video footage of a cow having its horns burned off at a dairy ranch. Now when I see a carton of milk or ice cream, that’s what I see. That cow.
PBJ: What advice could you give to those “struggling” with living a healthier lifestyle? This would include your three pillars: Food, Fitness, and Frame of Mind?
Lani: Absolutely, because I’ve never found anyone to have long-term success at change with diet and health without considering all three. Success on my terms means not only keeping the ‘weight’ off for 5 or more years, but having a healthy happy relationship with food, eating, and your body. White-knuckle weight loss, health and fitness are missing the happy component and it’s not my style. When people come to me for private coaching on making the transformation from weight problems and bad health to realizing radiant health and their body ideal, I make sure they understand that to work with me they are going to need to address all three to the best of their ability. To me, any less is not an honest approach to what is needed. Most people are good in one of the three pillars, but deficient in one or more. When we uncover the hidden obstacles and address all three, people’s bodies – and lives – transform.
My advice to those “struggling” is to find out, first and foremost, their “what” and their “why”. This is why I wrote the Mindset Mastery chapter in the Fit Quickies book. The struggle is not uncommon but too often people just keep “trying” and then “trying harder” and getting the same result.
From there, it’s building one piece at a time those behaviors – and that includes habits of thinking, eating, and moving – that are compatible with your highest ideals and goals. And being compassionate with yourself every step of the way. Expecting wins and teachable moments both.
PBJ: What prompted you to write, “Fit Quickies”?
Lani: Fit Quickies sounds like it’s a fitness book – which it is - but as you can see from the Fit Quickies Book Trailer, it’s three books in one. I call it a Trojan horse book because along with the fitness, it brings the plant-based nutrition and mindset practice.
My publisher (Penguin/Alpha) approached me about doing a book about the Fit Quickies exercises, and I said fine, as long as I can address the three pillars. And they were very positive about it – they saw the other work I was doing with plant-based nutrition and the mindset – - and they wanted it all.
PBJ: Meeting you has been a tremendous inspiration to me. You are always so positive, knowledgeable, generous, and genuine. Who are some of your inspirations?
Lani: Really? I am so happy to hear that Laura and it really means a lot to me that you say that and feel that way. There is so much to be positive about. There IS a solution to our health problems, the weight problem, the white-knuckle hunger problem, the fitness challenge, the challenge of our patterns of thinking. There are many solutions simpler than we might think. And one of my motivators is to cut through the hype that is out there surrounding it all. It makes me angry to see the diet and fitness world try to dupe people with secret formulas, intricate plans to try to trick your body into some semblance of a healthy weight, and magic bullets, when in face YOU are the magic bullet and the formula for healthy fitness is simple.
To be honest, some of my inspirations have been from the negative as well as the positive. You would think that everyone in the health world would be shoulder-to the wheel, let’s work together to forward the message, wouldn’t you? But evidently that is not the case and I’ve learned from those who have tried to sabotage the work of others to be as openly supportive and helpful as I possibly can. Let’s move the message forward. From negativity, I’ve responded with as much positive as I could. This is why I regularly have guests on my Teleclass series to promote their work in plant-based health and fitness. I review and promote their books and projects. I don’t see health and fitness care as competition and am always surprised when others do. Just move, eat, and be! And the more books or avenues of support you can avail yourself of to advance your success and happiness, the better. We need ongoing support with big change, which is why projects such as Plant-Based Junkies are such important and positive movements. More of everything!
PBJ: What has been your most rewarding benefit from living a plant-based lifestyle?
Lani: A whole-food, low-fat plant-based diet has delivered more than I ever imagined in making it easy to not have a problem with my weight anymore. Being able to teach and coach others in this has been extremely rewarding because the success rate is so high – especially when people address the other 2 pillars as well. Plant-based living is enriching on so many other levels. Knowing that your choices each meal every day can have such far – reaching effects, reducing planetary impact and creating a more compassionate kitchen, are no small thing.
PBJ: Are there any new or upcoming projects you are working on, or would like to incorporate with your current ventures?
Lani: The Book Tour, blog tour, and speaking engagements such as Vegfest that are booking in my calendar for the year ahead are exciting opportunities to keep spreading the message and bringing good news. The Fit Quickies book is also being considered to be used as a text in a college fitness course. I’ll be working again all through 2013 with the PCRM as celebrity coach with our 21-Day Vegan Kickstarts and also with the Complete Health Improvement Project (CHIP) with their amazing plant-based fitness program.
I’d also like to see more of us in the plant-based community join forces as allies. We’re all what I call plant-based adventurers, and as one way to recognize each other and spread the word I’ve created a badge that anyone can post on their blog, website or facebook page that says “I am a Plant-based Adventuress” there’s one that says “Adventurer”, too, so you can choose your button. You can find them easily in the right sidebar at lanimuelrath.com. This also gives me a chance to feature the blog, business, or facebook presence of others interested in advancing the plant-based lifestyle. I’ve also just launched the Healthy, Happy and Fit Club which is monthly calls with me where I feature the food, the fitness, and the mastery of mindset as well as answer questions from members. Q and A is my favorite avenue of learning and these calls are so much fun and very informative.
PBJ: What do you recommend as the “First Step” for someone wanting to gain their health back?
Lani: You can get your health back starting with the first bite at your next meal. You can exercise for 5 minutes today. You can sit less. You can reframe your attitude on everything. You absolutely build new habits and recreate yourself by how you eat, move, and think every day.
Start by picking one thing you can do that is compatible with your health goals. A great and simple place to start is with your breakfast. Start the day with a big bowl of oatmeal with some fruit. Plan on doing this for a week, and then if five days out of seven you have success, call it a win. The next week, add something else. Make the commitment to move your body for 15 minutes a day. It doesn’t matter if it’s all at once or in three segments of five minutes. And if you are already advanced past this and looking for more, then add a big bowl of lentil vegetable soup every day and make it 20 minutes of exercise. What you are looking for is change for new habits that show their effect over time. And you’ll be surprised at how quickly these changes can show up in results.

First of all, welcome to my humble abode. My name is Laura Black, and I am a Plant-Based Junkie (aka Herbie). If this is your first visit, you are most likely wondering: Plant-Based Junkies?? To answer your curiosity, I used to be what I considered a “Fast-Food Junkie”, in which I literally consumed fast-food two to three times a day, and I am not exaggerating when I say, I NEVER cooked. Now, I like to consider myself a “Plant-Based Junkie” (PBJ), where I consume as many whole-foods, fruits/veggies as possible, and I am proud to say, I LOVE to cook (thanks to the Happy Herbivore cookbooks). You can read more about my story here. I recently celebrated my one year “Plantiversary” in September, and I have never been more passionate about sharing this wonderful plant-based lifestyle. Who is HAPPY HERBIVORE
Just to fill you in a bit about this inspirational Herbie; Lindsay S. Nixon is most famously known as the “Happy Herbivore” (HH). She cooks with no added fats and mostly whole, unprocessed food. You won’t find processed flour, refined sugars and oil or margarine in her recipes. What you will find, however, is food that is good for you and tastes great! I was extremely excited when I ran across Happy Herbivore, when I began my plant-based lifestyle journey.
When I stumbled across her website, www.happyherbivore.com, I was in awe of the unlimited amount of helpful resources Lindsay had available to her audience. From her blog, to her cookbooks, recipes, videos, meal plans, including tips on how to Get Started. Lindsay is passionate about developing tasty, healthy, low-fat recipes, and sharing her knowledge with her fellow Herbies. I feel lucky to have discovered Happy Herbivore, as she has impacted my life on a whole new healthier level.
THE INTERVIEW
I am so honored to have been given the opportunity to interview the Happy Herbivore (HH). Keep in mind, I am a newbie to “blogging”, and I will be honest when I say that I have NO CLUE what I am doing, lol! However, as soon as I found out that Lindsay was looking to choose thirty-one bloggers to host her blog tour in the month of December for her new cookbook Happy Herbivore Abroad (HHA), the first thing I did was grab my interview questions from my most recent interview with Chef AJ, and the giveaway of her book, Unprocessed. I literally was so excited at the opportunity of featuring Lindsay’s new cookbook, that I wasn’t thinking straight, and took those questions, added one more question, and quickly e-mailed my interview questions back. With that being said, these are not quite the questions I had in mind for HH, and I wish I could have a “do over”, and ask more specific “Herbie” questions. None the less, I appreciate her taking the time to answer my questions, as I am still overwhelmed by being chosen to host one of her giveaways. I am still jumping with joy, as I love Lindsay and what she stands for. She truly is an inspiration to me, as well as many others.
THE INTERVIEW…
PBJ: What would you like to share with those thinking about starting a plant-based diet, but are frightened or unsure if they will be able to succeed?
HH: Take it a meal at a time. Don’t get caught up with over thinking. Worry about this meal, right now — not what you’re doing tomorrow, or next week or next Christmas. Never think in “Can’s haves” — it’s not that you can’t have it, it’s that you’re choosing not to. Also, focus on all the food you can have, not what you’re choosing to give up. I eat a wider variety of food now on a plant-based diet than I ever did on an omnivorous one!
PBJ: Was there an event in your life that persuaded you to make the transition to a plant-based lifestyle?
HH: I was a vegetarian for most of my life but lapsed back to eating meat in my late teens from peer pressure and family pressure. A serious health scare in my early 20s brought me back to a vegetarian diet and about a year later, after reading The China Study, I adopted a totally plant-based diet. That was about 6 years ago now.
PBJ: What is one of your favorite recipes from your new book, Happy Herbivore abroad?
HH: Asking a chef to pick a favorite recipe is like asking a parent to pick their favorite child

PBJ: What is your response to those folks that say they could never give up their meat, dairy, or processed foods? I used to be one of those people. My response used to be, “No cheese…are you crazy?” Also, any suggestions for those that say they are not big fruit or veggie lovers?
HH: Don’t let your food control you. Meat, dairy, junk food — it’s all addictive. Don’t be an addict

PBJ: What has been your most rewarding benefit from living this lifestyle?
HH: I like to tell people you never realize how bad you felt, until you realize what it feels like to be well. My life has changed in absolutely profound ways.
PBJ: What has been your biggest kitchen mishap/blooper?

PBJ: Out of all of your books, which has been the most fun/challenging to write?
HH: They’re all so different. Each has it’s own challenges, and own experiences. What I like about Abroad is that it’s so personal. There’s a lot more of me and my life in this book — which also is a little scary! It’s hard to bare it all.
HAPPY HERBIVORE ABROAD
Happy Herbivore Abroad (HHA) was released December 4, 2012. HHA was already into its second printing before the release date. How exciting is that??? Just under a year ago, Lindsay’s second cookbook, Everyday Happy Herbivore (EHH) made its appearance December 6, 2011, and her first cookbook The Happy Herbivore (HHC) debuted February 1, 2011. Lindsay is cooking healthy, low-fat /fat-free meals up a storm!
Also, all books are available on Amazon as ebooks (kindle edition). They should also be available through IBooks, and Nook soon; if not already. Kindle edition means you can read these delicious ebooks on any device, including your web browser. No “kindle” required. You just need one of the following: computer, smart phone, iPad, etc…Why not have both an electronic version and paperback? How awesome to have three fabulous cookbooks at your fingertips while out, and about (like the supermarket), or “Abroad”.
Her first cookbook, The Happy Herbivore (HHC) has over 175 delicious fat-free and low-fat vegan recipes. This was one of the first cookbooks I purchased at the beginning of my journey, and I literally said “I can’t believe this is healthy food!”. The muffins are so moist you will not believe they are fat-free, and cookies and cupcakes so tasty you will honestly deny that they are healthy foods. I loved all of the “comfort foods”, as
I definitely needed them at the beginning of my journey. The recipes do not use obscure ingredients or tools, which I was thankful for considering I had never cooked before. Some of my favorite recipes from HHC are: Black Bean Burgers (literally has 5 ingredients) page 86, Chocolate-Zucchini Muffins page 45, and Baked Beans page 199.
Her second cookbook, Everyday Happy Herbivore (EHH) features over 175 quick-and-easy fat-free and low-fat vegan recipes which can be put on the table in 30 minutes or less. The recipes are still made with wholesome “everyday” ingredients and without added fats like oil. I loved the fact that I could cook three meals a day,
from whatever ingredients I had on hand, in normally around 20 minutes. Here are some of my faves: Mexican Dinner which consists of, Bella Tacos page 91, Skillet Refried Beans page 179, and Taco Sauce page 293. For dessert, we like to munch on the Single-Serving Blueberry Muffin page 56 (which my step-daughter LOVES).
Blogging about Lindsay’s third cookbook, Happy Herbivore Abroad (HHA), is a DREAM COME TRUE for me. It is surreal to look back at when I was a new “Herbie” at the time EHH cookbook came out, to a year later blogging about yet another fantastic cookbook of Lindsay’s!
HHA is AMAZING, and I hate to say the “BEST YET” because the other two books are just as delicious, but in my opinion, I think what stands out about HHA, is her international recipes, and stories of her adventures throughout the book. The numerous pictures of her travels are phenomenal, as well as breathtaking. Oh, and if you are the type that likes to have “pictures” of what you are making and eating….THIS IS YOUR BOOK! The pictures alone make your mouth water, even more so when you are cooking the recipes.
Again, not using hard-to-find ingredients or complex cooking methods. Lindsay as always, made sure to include a shopping list. Oh, and something NEW Lindsay added: DRINK recipes! YES, you heard me. From Hot Chocolate, to Sangria, Tinto de Verano, and Aqua Fresca. You HAVE to get this book!! This go-to book also uses “icons” for each recipe detailing the following:
I have included some of my favorites from HHA so far. You will notice that the majority of them are spicy, or soups. I live in Illinois, and it is COLD this time of year! Fortunately, there are plenty of recipes in HHA that cover all types of seasons.

I have been given the privilege of sharing a typed-out recipe from Lindsay S. Nixon’s new cookbook, Happy Herbivore Abroad. I was given a list of recipes to choose from, and I chose African Jollof. The reason I chose this recipe, is because I normally eat this type of meal frequently throughout the week. I have every single ingredient in my house daily, and I love brown rice, and frozen vegetables. Again, this is a little spicy, which I particularly enjoy this time of year. I hope you enjoy this as much as ME!

African Jollof
Jollof rice, also called “Benachin,” is a popular dish throughout West Africa, particularly in Ghana and Nigeria. Many variations to this dish exist throughout West Africa, but core ingredients include rice, tomato paste, onion, and a medley of vegetables and spices.
Serves 4
¼ c tomato sauce
vegetable broth, as needed
1 small onion, diced small
ground cinnamon
½ tsp ground cumin
½ tsp chili powder
¼ tsp mild curry powder
2 c frozen mixed vegetables
1½ c cooked brown rice
1 tbsp tomato sauce
(additional) hot sauce, if desired
Pour tomato sauce into a pot, then add enough broth so liquid completely covers the bottom. Add onions, a dash or two cinnamon, cumin, chili powder, and curry powder, then sauté over high heat until translucent—about one minute. Turn heat down to low and add frozen vegetables, stirring to warm them. Continue to cook over low heat and stir frequently until vegetables are warm. Add cooked rice and stir to completely combine. As you are stirring, the rice should take on a dark coloring. Add one more tbsp tomato sauce, plus salt and black pepper to taste. For a spicier dish, add hot sauce to taste.
