Chapter 3 in her book, I related the most to.   • YABBUT #4 – But my friends and family won’t support me in this.

In addition to giving away her book UNPROCESSED, Chef AJ was nice enough to take time out of her busy schedule, to answer some questions.

PB&J: What would you like to share with those thinking about starting a plant-based diet, but are frightened or unsure if they will be able to succeed?

Chef AJ: That just because you may not be able to do everything doesn’t mean you shouldn’t do anything in the direction of optimum health. Like eating more fruits and vegetables, for example and eliminating or decreasing the amount of processed foods and animal products.

PB&J: Was there an event in your life that persuaded you to make the transition to a plant-based lifestyle?

Chef AJ: Yes. In college I was pre-vet and I had to cut the head off of a live salamander. I never ate or wore another animal after that.

PB&J: What is one of your favorite recipes from your book, Unprocessed?

Chef AJ: I think the Hail to The Kale Salad and The Disappearing Lasagna are the best recipes. Of course, all of the desserts are great too!

PB&J: What is your response to those folks that say they could never give up their meat, dairy, or processed foods? I used to be one of those people. My response used to be, “No cheese…are you crazy?” Also, any suggestions for those that say they are not big fruit or veggie lovers?

Chef AJ: The reason they don’t love fruit is because they are addicted to sugar. Once you abstain from sugar, all sugar not just white sugar, but agave, maple syrup, brown rice syrup, barley malt, molasses and even stevia, fruit tastes amazing. Once you stop eating crap you can learn to love veggies too. When people say they could never give something up that means they are addicted to it. Smokers say they could never give up cigarettes. Alcoholics say they could never give up booze. If I told you that you would never get heart disease, cancer or diabetes if you would abstain from Okra, do you think you could do it? But when I say it’s meat, dairy, sugar or oil you can’t. It’s called A-D-D-I-C-T-I-O-N!!!

PB&J: What has been your most rewarding benefit from living this lifestyle?

Chef AJ: Seeing my students on death’s door, morbidly obese with heart disease or diabetes completely turn their health around.

PB&J: What has been your biggest kitchen mishap/blooper?

Chef AJ: My motto is “it’s not what you can make but what you can fix” so it hasn’t happened yet.

    Question 1: I need to desperately get back to a healthier lifestyle. I have no energy, sinus headaches etc… Time for a change buy cant get motivated to do it.

      Find your motivation, and keep it at the forefront, as it will help keep your focus to sticking to your goal. Check out my blog, “how to get started”, it might help in some areas. Start by knocking out one YABBUT at a time, you can do it, I believe in you. Good luck!!

    A friend saw the movie thru a suggestion from his physical therapist, so I watched it and changed the next day, have told many people about it. Four of us started around the same time so we check in with each other and surprisingly, we’re all eating different stuff. I never knew I could have so much variety. My motivation is recently ending a bad relationship, had gained twenty pounds, felt heavy, back pain, sluggish, frustrated, this was just what I needed. When the student is ready….and I was ready. Only been a couple weeks but Ive lost weight, no pain, feel lighter inside and out. I love it. My reservation is butter and sugar(in my coffee), but am using soy creamer and no meat or dairy any other time. My kitchen has no grease anymore either! Its a cleaner, lighter feeling all the way around! I’m cooking something new everyday. And I believe in it, most importantly!

    Oops forgot to answer the question. My motivation is that I’m sick and tired of being sick and tired. My YABUTT is that I dot have the first clue how to do this. I was raised eating the meat, potatoes, white bread and sugar diet and have continued that with my family because that is all I know how to cook. The guilt is overwhelming!

      I can totally relate to bring sick and tired, read my story. I have never felt better once I quit feeding my body processed foods (can you really call it a food?). Also, I was also the same regarding where to begin. Check out my blog, “how to get started”, hopefully that will help with your journey. Everyone is different, and there are do many paths you can take. Just educate yourself and do your research, as that will definitely help. I have a link at the top titled “resources-videos”.     My motivation is my son is on the autism spectrum disorder and his behaviors are worse when he has had processed foods, preservatives, dyes, etc. My Yabutt is that it is so expensive and we are living off of a police officer’s salary :(

      Great answers! Motivation is key, and it sounds like your son benefits greatly from not consuming processed foods. I have found that eating unprocessed can actually be cheaper than before. Buy your beans, whole grains, etc…in bulk, and making your own dips, dressings, etc…helps in this department. Keep up the great work!

    My motivation for eating unprocessed is essentially health. Not only my health but my families health. I will be 49 years old this December and January 1st will be My 1st year anniversary for going vegan. I have a 7 year old and a 14 year old that I need to keep up with in the years to come. I hope to set a good example to help lead my family down this path. My choice has awakened me to the harsh reality of the meat and dairy industry and the unnecessary death and suffering of these animals. The environmental impacts of Industry led farming, the use of chemical fertilizers and insecticides and the use of GMOs cannot be ignored by anyone in their decision to follow this lifestyle. We need to save ourselves, the animals, and our natural resources. The health of the planet is maybe the bigger picture, for when we are gone it will still be here. We are the keepers.

    The source of my motivation above all else is GOD! Even when I struggle with the temptations around me and want to give up…even when I trip and fall…God has been right there helping me get back to my feet and dust myself off, and encouraging me to keep going. Going plant based has been a gradual process for me. I have enormous respect and awe for the people who can transform overnight, but that has been impossible for me. What HAS been possible, however, is taking one step at a time…slaying each dietary demon as I go. First I gave up soda…then it was pork products, including my much loved bacon…then cheese…now I have my death glare set on red meat. And I will keep going until they are all locked away in the closet of my past, along with the fat/sick suit I once wore. And I have countered each elimination with an addition in the form of healthy foods. I started trying vegetables I had never even heard of, such as kale, which I have come to love. I reintroduced veggies I remember loathing as a child, because they were canned and heavily processed, like spinach. But I reintroduced them in their raw, fresh state and grew to crave them more each time I ate them. I started buying beans, which I also once loathed, and things like quinoa, which I had never heard of. Now these all are regular parts of my diet. The source of my motivation is also my Father. Someone I watched almost die from a heart attack in Nov. 2011. His double bypass was a wake up call for us both, just as watching one of my Grandfathers die of lung cancer & another from emphyzema was my motivator for giving up smoking in 2007. My motivation has been helped along by the people I see around me who are walking dead…oblivious to everything but their fast food fix and artifically enhanced poisons they put into their bodies. People who complain that our government has become a nanny state with the introduction of laws to ban the sales of mass sugary drinks. They want to say that THEY should be allowed to make their own choices, but when left to their own devices, they exhibit no signs of responsible behavior. They take no responsibility for our healthcare system being an out of control, taxpayer draining, NIGHTMARE. They take no blame for the habits they are handing over to their children who depend on them to be role models. If you want an example, just look at the family of ‘Honey Boo Boo’. The obesity in this family is just jaw dropping. The Mother feeding her daughter liquid poison in the form of Mt Dew & Red Bull, making her fat & hyper. And tv viewers LAUGH at this behavior. It just makes me want to cry. And lastly, one of my most special motivations has been my incredible love and compassion for animals. It is not even just about the horrible abuse they endure anymore. Even if the entire industry conformed to safer, more human standards, the fact that ANY animal is being slaughtered for my dinner plate just doesn’t sit well. I have evolved spiritually enough over the last few years to recognize that every animal has a face. Every animal has a personality…a family…a voice…and a right to LIVE. Just as I do. And I cannot even FATHOM myself being an unwilling guest on someone else’s dinner plate.

  10. I had every yabutt in the book and even some that have never been published. For the last 20 plus years I have suffered from thyroid disease, high blood pressure and deep depression. I had no energy or desire to learn to cook. I ate what was fast, cheap and convenient. It wasn’t until I hit an all time high of 249 lbs and a blood pressure level over 200 that sent me spiraling into crippling anxiety and a near heart attack myself, that I stood before a mirror and I wanted to literally shatter it with my fists. I was tired of allowing myself to be a victim. And I was tired of being a prisoner inside of my own body. I didn’t have a clue for so many years and I used that as a yabutt. But once I recognized on a conscious level that I WANTED to escape from the prison I had built around me in the way of flesh and fat, the books and people I needed to inspire and motivate me just started springing from thin air almost. I have lost almost 30 lbs over the last year and a half, and my goal is to lose a minimum of 50 more. The importance of it all for me though is not just losing the weight around my body, but around my soul. It’s about tranforming into the kind of person who appreciates the beauty of being alive and can inspire others. It’s about being healthy not just in body, but in mind. I’ve pretty much silenced all of the whiny yabutts. :)

    1. My reason for wanting to live unprocessed is because I need to make many changes in my life. I need a complete life and style makeover, not just in what I eat by my life as a whole. As far as my health is concerned, I’m tired of having mysterious pains that no one can figure out the cause or source, I’m tired of being tired all of the time and I don’t like who I see when I look in the mirror!

      I can completely relate to you. It may not be an easy journey, but it is so worth it to not be tired all of the time, and in pain. You just have to tell yourself, YOU CAN DO IT, and DO IT! I believe in you :)

    My motivation for eating Unprocessed is my health and the health of my family. I don’t want to potentially bring disease, cancer, heart attacks, diabetes, etc. upon any of my family members if it can be stopped by what we eat. It is such a simple thing and unbelievable that more people don’t “get it” and understand that this can save your life or your children’s lives. It is totally worth it. Is there anything more important???

    2. My biggest YABBUT is I have NO willpower. When I see something I want, get a craving, am moody (mad, depressed, stressed) I just grab what’s quick and unhealthy. I also don’t cook ANYTHING so the thought of being in the kitchen makes me ill! Another YABBUT is my kids aren’t going to like it because they are already so picky as it is.

      That is too funny Tiffany, because I used to be the same way with willpower, and that was most definitely me with the cooking! I don’t believe I had ever cooked anything but mac n cheese before, lol. Now, I LOVE to cook, because of all of the delicious, wonderful foods that I get to enjoy. It feels so great to know that I am making a choice to eat healthy, as it truly is a concious effort (in the beginning). Now, there truly is NO WAY I would eat unhealthy foods again. Regarding your kids, that is so true regarding any foods. Kids can be picky, but if you slowly add the healthy foods into their meals (maybe into their smoothies), their taste buds also will begin craving the healthy foods. There are many options to making eating healthy FUN or kids. Good Luck!

    Question #1: What is your source of motivation for eating UNPROCESSED? I was on a path to diabetes and hypertension, and just wanted more energy to keep up with my son.

    Question #2: What is, or was your YABBUT? I can’t do it with my busy schedule! Yes, I have to plan ahead more, yes, I can’t eat out as easily (but that’s not necessarily a bad thing…) but all those things became easier and easier to handle and so worth it with fantastic energy, improved health and a loss so far of 70 lbs.

    Like you, my Yabbut was cheese. I never thought I could give it up and now realize how addicted I was. Do I still crave it? Yes, but there are ways I can satisfy my craving without eating cheese, and that is awesome.

    Question #1: my source of inspiration is seeing how my parents are faring in their advanced age having followed the SAD all their lives. Now, their bodies are shutting down and they cannot enjoy life. I would love for them to follow a plant-based diet, but I think the only way that will happen is if I can somehow lead by example and show them the way.

      Leading by example is the best way! I am in the exact same position. Majority of my families health is deteriorating. Perfect example is those who smoke, they KNOW it is killing them, but yet they still do it. (I know, because it used to be me). People will make the necessary changes when they are ready.

    My Yabbut used to be I cant live without cheeze. Well that was until after what happened after eating a grilled veggie sandwitch loaded with cheeze in July of 2011. After I ate that sandwitch and I quite often had them. I was in water yoga and had a bout of nausea. It was a nausea like no other I have ever had. I left the class quickly and went home where for the next few hours I thought I was getting the flu. About 2 hours into the nausea I thought I will lay down and take a nap. Something in my head said do not fall asleep because you are going to die. I decided to not take that nap. About a hour later I was having shortness of breath shoulder pain and was all clammy. I decided to take a asprin. I kinda thought I was having a heart attack but was in denial. The day before I kayaked in San Francisco Bay and that morning I walked a dog and when the nausea started I was in yoga. I have always been active and had been a vegeterian for 20 years. I thought of myself as heart attack proof. I was only 53 years old.
    I had 2 ambulance rides first one to Santa Rosa where they determined I did have a heart attack. My second ambulance ride was to San Francisco
    In San Francisco they installed 2 stents. My heart was not responding well and I had to spend 5 days in the hospital. When I was released my ejection factor was at 35 and the front of my heart was not responding. I could barely get up the stairs to my house. In the following months I kept eating the same way and then along with the low functioning heart I developed Dresslers Syndrome which means inflamation around my heart. It was a few months later around November I had my unprocessed moment. I threw out the butter, cheeze and all dairy from my house. I started to read every label and would and still do not eat anything with oil and high fructose corn syrup.
    It was a very long winter. In March I was able to go to water yoga but only could do about 20 minutes. By May a full 10 months after my heart attack I was finally having very little pain from the Dresslers and was finding myself finishing the yoga class and back in my kayak and out having fun again. This summer I have been able to do my favorite activity which is kayak camping where you load your boat with all the camping gear and food. Then paddle into a nice beach and camp.
    This is long but I feel my heart attack story may save someones life. I also have lost 20 pounds since starting my plant diet. I will never go back to the old way of eating.

    My inspiration is that in February of this year, I suffered a ‘cardiac episode’ and the cardiologist told me to have a pacemaker inserted. I don’t want one! He has given me six months to turn my health in the right direction and I am determined to succeed. My appt is next week so we will see what he thinks! Wish me luck!

      It helps to have a role model, and someone that had set a great example. Keep surrounding yourself around those that will offer positive feedback, and you will notice it becomes easier. There are plenty of people to support, and encourage you.

    My YABBUT would have to be… Time is a big factor. And a lot of recipes are complicated, or ingredients are hard to find.

      I used to feel the same way in the beginning, mainly because I never stepped one foot in the kitchen. I have found tons of easy to make recipes with simple ingredients. Check out the recipes on the right of the page, as well as the link to recipe websites at the top of our page. It truly is not time consuming ( you just have to plan ahead), and you will find more recipes than not that are quick, and simple to make. You could also check out http://www.happyherbivore.com for meal plans that include your grocery list for the week, as well as already planned out meals for the entire week. Keep working on kicking that YABBUT to the curb. We believe in you!

  34. Hi, I liked your page and joined your group on facebook. To answer your question, my biggest motivation that keeps me on track with my plant based lifestyle is that I recently found out that I was born with a defective aortic valve. My cardiologist told me that almost everyone who has my heart defect will need a valve replacement at some point in their life (key to this statement, he said ALMOST EVERYONE). My goal is to be one of the few with my condition who do not need a valve replacement. My goal is to be around and healthy for a long long time for my husband and daughter. I don’t want to be among the majority of people with my condition who are dependent on medications and life threatening surgeries for the rest of my life. Everything I have read about a plant based diet leads me to believe that I have a shot at controlling my health and future. Maybe I won’t be able to avoid having a valve replacement, but at least I will know I have tried.

    My motivation is to stay healthy as I get older! This included staying away from the dementia that runs in my family.
    My YABBUT…. I like to eat out with friends and family once in a while. The hardest part is finding something on the menu that won’t leave me feeling deprived.

    My motivation came after watching Forks Over Knives. My sister was diagnosed with breast cancer when she was 29. She didn’t test positive for the gene so it really makes me wonder what caused her cancer. I knew that a bad diet could affect your risk of heart disease and diabetes. I never realized how much cancer risk is related to your diet. My YABBUT is that none of my family/friends eat a plant based diet and this will be too hard to follow if I ever want to eat with these people!

Regarding your family/friends, and being too hard to follow; keep your motivation at the forefront, and stay focused as to why you are changing your eating habits. If you slip up here and there, no biggy! Just start back over fresh, and not beat yourself up about it. Making gradual changes helps in this area, but regardless….you can do anything you set your mind to. Ultimately, you are the one to make the necessary changes, and you are the one to stick with it; as you are the one who has to live your life. Just remember, if you lead by example, they may just follow suit. Good Luck!

    question 1 – My dad is my biggest motivation. He started eating plant based (ETL) a year ago and has lost 70 pounds and reversed his Type 2 diabetes. I saw how healthy and happy he has become and I wanted to support him so I began eating plant based in June of this year. I love that we are taking this journey together.

    Question 2 – My yabbut was that I have no health concerns and thought I was eating healthy so why did I need to radically change my diet. Also, didn’t think my husband would get on board. However, after watching Forks over Knives and doing more research, I realized the SAD diet I was following was nowhere near healthy. And my husband (who has high cholesterol) surprised me and wanted to try along with me. We have both slimmed down and can’t wait to see his next blood test results!

  49. My source of motivation for going plant based was the fact that I’ll be 50 in a few months and even though I don’t have any major health problems, I don’t want any. I started in June of this year and I lost 20 lbs. I would like to lose another 5 to 10 but it will happen on its own. I have a diabetic husband and his type 2 is not weight related and I would like to be able to get him off all his meds.

      That is a great reason to stay motivated! Way to go, on your weight loss. There are countless type 2 diabetics who have gotten off their meds, by following an UNPROCESSED, whole foods, plant-based diet. As they say, “With this lifestyle, results are typical”. Good luck!

    My son is my biggest motivation. He is 23, has been a vegetarian for about 7 years and is VERY thoughtful about what he eats/drinks. My biggest “yabbut”, Yabbut, my family won’t want to eat this way. Now I’ve decided/realized, since I am the main cook and grocery buyer, they’ll eat what I prepare.

    My motivation is the way I feel when I eat “Unprocessed”. My joints feel better, I have more energy, I lose weight (down 70+ lbs already), I have greater flexibility and strength, and much higher self esteem. My husband eats exactly the way I do and is enjoying all the benefits of renewed health and vitality as well. I just can’t imagine ever going back to eating the SAD knowing the way it would make me feel and the impact it would have on my health and longevity. Besides, with great recipes like Chef AJ gives us, it’s a pleasure to eat “Unprocessed”!

      Congrats on feeling better, and losing weight. That was one of the first things I noticed, besides having more energy and my weight loss, was my confidence was building. It felt fantastic to no longer have a low self esteem, and actually feel good about myself again. I am thrilled to hear your husband is on board with you, as I know it helps to have support.     My motivation for eating unprocessed, was to see if I could ‘reverse’ my diabetes, which was extremely high and my very high blood pressure. I also was about 60 pounds overweight. I have now been a vegan and completely unprocessed for over a year now. I am hooked. No turning back for me!! I have lost 40 pounds, and my blood pressure and diabetes have almost totally ‘reversed.’ I absolutely love being vegan/raw. I am learning how to remain true to my ‘new’ lifestyle in an animal-based eating world, as all of my friends are not vegan, or even health-minded.

    My motivation started out being weight loss, but now that I’ve lost 30 lbs. and have been plant-based for 8 months, my motivation is stronger than ever, but about something different. Now I just want to keep feeling this healthy! I am actually repulsed by meat now, something I never expected. I think of nothing but artery-clogging fat when I see cheese, and think of some science experiment when I see processed, boxed food. I’m changed forever!

    I am new to this unprocessed food idea and it has been a challenge to say the least. My motivation is to have a longer life with a better quality of life than the life I would have if I continue on the path I have been going down. I have family and friends and am not yet ready to throw in the towel on this life. I have lots of health issues that after reading and doing research I now have hope that I can cure them if I get away from the processed foods. Before I started reading about these plant based food meals and ways of eating, I felt very discouraged as I had tried so many things to get healthy and yet I continually am adding medications upon medications and feeling horrible. Anxiety, panic, depression, asthma, obesity, high cholesterol, high blood pressure among other things. I am way to young to have all this going on, not to mention at any age I think this is way to much to be having going on. I need to make changes. I have managed a couple of 8 day juicing stretches and felt absolutely amazing after the 1st couple of days. I keep falling off the wagon and go bizerk with comfort foods. Got hope, gonna keep fighting :)

    I have lots of Yabutts! Yabutt that’s what I was raised on. How could my parents have been feeding me food that was bad for me. Yabutt the big farmers wouldn’t try to kill their customers would they? Yabutt the government is here to protect us right? Oh my, the list could go on. Yabutt, look at so and so and I see them pig out on bad food all the time and they look great! I got every excuse in the book I think.

    Hi! My motivation is my health. I was in a car accident 3 yrs ago. Taking ibuprofen 400 daily was not setting well with me but the only way I could function! I switched to vegan/plant based diet 11 mo ago. Never felt better! Non processed foods are ideal also for braun health with omega and vitamin d. Together with exercise heal illnesses that many think are chronic, but preventable! Thus shift in thinking, worldwide could be answer. I tell everyone who will listen;-)

    What is your source of motivation for eating UNPROCESSED?
    I am very new to this lifestyle. But, for several months I have been seeking a new overall health approach to fitness and health that works long-term. My motivation is not just for looks, but I truly want to be healthy from the inside out. I recently watched “Forks over Knives” and “Fat, Sick, and Nearly Dead”. These movies really hit home for me because of the chronic diseases that are present in my family. I do not want to suffer the effects of diabetes, stroke, heart disease, or high cholesterol. So, why not eat for health, wellness, and significantly decrease my chances of experiencing these conditions. There is a noticeable difference in my energy level, skin/complexion, allergies, and emotional state when I eat a plant-based diet. I want to live a long life free of crippling conditions.
