Lani’s Philosophy
In order to get what you want with your health and weight, you have to go three for three. All three of these must be in alignment.
And when you get these three in alignment, – the food, the fitness, and the mastery of mindset – I call them the Three Pillars of Success – you will become unstoppable.
When it comes to weight loss, it’s all about the food. A whole foods, low-fat plant-based diet is what has brought me personal unparalleled success. It is a way of eating the brings into beautiful alignment health, environmental issues, and a kitchen of compassion.
When it comes to shaping your body, it’s all about muscle challenge. And when it comes to making it all happen? Well, that’s where the mindset comes in. But honestly? They all work together.
Nothing is more exciting and rewarding to me that helping you realize success at living healthy, happy and fit. Our bodies are our vehicles of expression and purpose in the world – and being fit, healthy and energetic have huge bearing on your impact and joy. Living in alignment of purpose with your diet and lifestyle creates an unbeatable platform for success.
I believe in making a positive impact through personally practicing this alignment with the principles I coach and teach. My life’s work is focused around helping others become the healthiest, happiest person they can possibly be with the foundation of good diet, physical activity, and mindset for success – the inseparable three pillars.
Join me on this healthy, happy and fit journey.

The Interview
Lani Muelrath is the most down to earth, honest, sincere, helpful, intelligent, and compassionate woman I have had the pleasure of conversing with. Lani set aside some of her busy schedule to answer some questions, so we could get further acquainted. Not only is she knowledgeable regarding the three pillars of health, weight loss and fitness success, she is also eager to inform, and help others.
You have the chance to personally work with not just a “fitness expert” or “coach” but a true healthy living mentor — one who has been called “The Plant-Based Health and Fitness Expert” by Vegan Mainstream and examiner.com, serves as Fitness Advisor for Dr. John McDougall’s Health and Medical Center Discussion Boards, presenter for the CHIP (Coronary Health Improvement Project), and Celebrity Coach for the Physician’s Committee for Responsible Medicine 21-Day Vegan Kickstart and VegRun Programs.
From virtual online programs to live, personal mentoring, Lani offers many levels of coaching and consulting for people looking for weight, energy, body-shaping and health solutions, whether you are just starting out or looking for coaching and support to overcome hidden obstacles or sharpen your diet, exercise and mindset toolkit to further advance your success.
Here is my interview with the lovely, and knowledgeable Lani Muelrath:
PBJ: Who is Lani Muelrath, the plant-based based fitness expert? What do you stand for, and how would you like to be “remembered”?
Lani: I would like to be remembered as having made a difference in people’s lives by impacting their health and their consciousness about food. That I somehow helped release them from the bondage of an unhealthy body AND brought them also to a place of happiness and peace in their relationship with food, eating, and their body. Having sharpened the tools to totally change that for myself, I’m inspired to carry the message to whoever wants to hear it and get it for themselves.
PBJ: Was there an event in your life that persuaded you to make the transition to a plant-based lifestyle?
Lani: Multiple events! I became a vegetarian many years ago – 39 now – and my reasons were then as they are now: for humanitarian, health, and environmental reasons. Even then, there was lots of information available to the public about the impact of animal foods in the diet, which made it a no-brainer choice for me to adopt a vegetarian diet. These reasons are more compelling now than they ever have been.
Then a few years ago, after intermittent stops and starts, I also ditched dairy products as the last holdout in my veggie diet. For years, I would wince when driving past the cows in the fields at the dairy ranches that I passed on the drive to the school where I taught each day. And during the times when I was not eating dairy, my conscience was a whole lot clearer. I can point out 3 specific events that resulted in the jump: something my friend Colleen Patrick-Goudreau (the Compassionate Cook) said, Dr. McDougall’s physician seminar that I was invited to attend (there’s a passage about this in the Fit Quickies book) and video footage of a cow having its horns burned off at a dairy ranch. Now when I see a carton of milk or ice cream, that’s what I see. That cow.
PBJ: What advice could you give to those “struggling” with living a healthier lifestyle? This would include your three pillars: Food, Fitness, and Frame of Mind?
Lani: Absolutely, because I’ve never found anyone to have long-term success at change with diet and health without considering all three. Success on my terms means not only keeping the ‘weight’ off for 5 or more years, but having a healthy happy relationship with food, eating, and your body. White-knuckle weight loss, health and fitness are missing the happy component and it’s not my style. When people come to me for private coaching on making the transformation from weight problems and bad health to realizing radiant health and their body ideal, I make sure they understand that to work with me they are going to need to address all three to the best of their ability. To me, any less is not an honest approach to what is needed. Most people are good in one of the three pillars, but deficient in one or more. When we uncover the hidden obstacles and address all three, people’s bodies – and lives – transform.
My advice to those “struggling” is to find out, first and foremost, their “what” and their “why”. This is why I wrote the Mindset Mastery chapter in the Fit Quickies book. The struggle is not uncommon but too often people just keep “trying” and then “trying harder” and getting the same result.
From there, it’s building one piece at a time those behaviors – and that includes habits of thinking, eating, and moving – that are compatible with your highest ideals and goals. And being compassionate with yourself every step of the way. Expecting wins and teachable moments both.
PBJ: What prompted you to write, “Fit Quickies”?
Lani: Fit Quickies sounds like it’s a fitness book – which it is - but as you can see from the Fit Quickies Book Trailer, it’s three books in one. I call it a Trojan horse book because along with the fitness, it brings the plant-based nutrition and mindset practice.
My publisher (Penguin/Alpha) approached me about doing a book about the Fit Quickies exercises, and I said fine, as long as I can address the three pillars. And they were very positive about it – they saw the other work I was doing with plant-based nutrition and the mindset – - and they wanted it all.
PBJ: Meeting you has been a tremendous inspiration to me. You are always so positive, knowledgeable, generous, and genuine. Who are some of your inspirations?
Lani: Really? I am so happy to hear that Laura and it really means a lot to me that you say that and feel that way. There is so much to be positive about. There IS a solution to our health problems, the weight problem, the white-knuckle hunger problem, the fitness challenge, the challenge of our patterns of thinking. There are many solutions simpler than we might think. And one of my motivators is to cut through the hype that is out there surrounding it all. It makes me angry to see the diet and fitness world try to dupe people with secret formulas, intricate plans to try to trick your body into some semblance of a healthy weight, and magic bullets, when in face YOU are the magic bullet and the formula for healthy fitness is simple.
To be honest, some of my inspirations have been from the negative as well as the positive. You would think that everyone in the health world would be shoulder-to the wheel, let’s work together to forward the message, wouldn’t you? But evidently that is not the case and I’ve learned from those who have tried to sabotage the work of others to be as openly supportive and helpful as I possibly can. Let’s move the message forward. From negativity, I’ve responded with as much positive as I could. This is why I regularly have guests on my Teleclass series to promote their work in plant-based health and fitness. I review and promote their books and projects. I don’t see health and fitness care as competition and am always surprised when others do. Just move, eat, and be! And the more books or avenues of support you can avail yourself of to advance your success and happiness, the better. We need ongoing support with big change, which is why projects such as Plant-Based Junkies are such important and positive movements. More of everything!
PBJ: What has been your most rewarding benefit from living a plant-based lifestyle?
Lani: A whole-food, low-fat plant-based diet has delivered more than I ever imagined in making it easy to not have a problem with my weight anymore. Being able to teach and coach others in this has been extremely rewarding because the success rate is so high – especially when people address the other 2 pillars as well. Plant-based living is enriching on so many other levels. Knowing that your choices each meal every day can have such far – reaching effects, reducing planetary impact and creating a more compassionate kitchen, are no small thing.
PBJ: Are there any new or upcoming projects you are working on, or would like to incorporate with your current ventures?
Lani: The Book Tour, blog tour, and speaking engagements such as Vegfest that are booking in my calendar for the year ahead are exciting opportunities to keep spreading the message and bringing good news. The Fit Quickies book is also being considered to be used as a text in a college fitness course. I’ll be working again all through 2013 with the PCRM as celebrity coach with our 21-Day Vegan Kickstarts and also with the Complete Health Improvement Project (CHIP) with their amazing plant-based fitness program.
I’d also like to see more of us in the plant-based community join forces as allies. We’re all what I call plant-based adventurers, and as one way to recognize each other and spread the word I’ve created a badge that anyone can post on their blog, website or facebook page that says “I am a Plant-based Adventuress” there’s one that says “Adventurer”, too, so you can choose your button. You can find them easily in the right sidebar at lanimuelrath.com. This also gives me a chance to feature the blog, business, or facebook presence of others interested in advancing the plant-based lifestyle. I’ve already started featuring a “Plant-Based Adventurer of the day” where I post a snapshot of your website or facebook page with the badge displayed. So if you grab a badge and put it up, be sure to let me know about it so I can feature you. The badges are easy to find and install – see the right sidebar at lanimuelrath.com.
I’ve also just launched the Healthy, Happy and Fit Club which is monthly calls with me where I feature the food, the fitness, and the mastery of mindset as well as answer questions from members. Q and A is my favorite avenue of learning and these calls are so much fun and very informative.
PBJ: What do you recommend as the “First Step” for someone wanting to gain their health back?
Lani: You can get your health back starting with the first bite at your next meal. You can exercise for 5 minutes today. You can sit less. You can reframe your attitude on everything. You absolutely build new habits and recreate yourself by how you eat, move, and think every day.
Start by picking one thing you can do that is compatible with your health goals. A great and simple place to start is with your breakfast. Start the day with a big bowl of oatmeal with some fruit. Plan on doing this for a week, and then if five days out of seven you have success, call it a win. The next week, add something else. Make the commitment to move your body for 15 minutes a day. It doesn’t matter if it’s all at once or in three segments of five minutes. And if you are already advanced past this and looking for more, then add a big bowl of lentil vegetable soup every day and make it 20 minutes of exercise. What you are looking for is change for new habits that show their effect over time. And you’ll be surprised at how quickly these changes can show up in results.
If you are looking for direction on how to structure a plant-based diet, there is a readily available resource for you with my Plant-Based Blueprint. I wrote this to show people how easy it is to eat this way, and I did it by reporting on my personal food journal to which I added lots of notes and a quick start guide. There are lots of places to find menu ideas, but with The Plant-Based Blueprint I wrote down the reality of what it looks like on my plate every day. The Plant-Based Blueprint is available in two options now: the 2-day sampler and quick start guide and the full 60+ page version, which is a gift when you buy the Fit Quickies book – all the easy instructions are at lanimuelrath.com. The Fit Quickies book also has a huge chunk of content about a plant-based diet with my 5 simple food groups and personal journey.
Thank you Laura for this opportunity to share with the Plant-Based Junkies community. You are off to such a great start, have a wonderful energy, and I’m so pleased to be a part of PBJ.

for the new year I hope to work on my mental follow through. I have great ideas and intentions, but lack the follow through in the moment.
Tracy E – you are not alone! I think the mental aspect is the one most often overlooked. When things are going well, we don’t worry about it, and when things start to fall apart, it feels too late! thanks so much for your thoughts today!
Lani
I also have that on my list to improve on, Tracy! New Year, New Beginnings. Have a happy, healthy New Year

I would really love to win this book, very busy single mom with really no access to a gym but I could really make time for 5 minutes. need to get the last 30 lbs off, I have been on at a stand still for about 4 months now. I know I can do it I have already gotten 50 lbs off but these last 30 are being a nightmare, I just don’t know what to do, I feel like I am banging my head against a brick wall
Lashmi,
Down 50 lbs? We’re twins! You’re amazing – yo did that as a single mom? It’s amazing what 5 minutes can do, and you can sneak them in throughout the day. Busy moms are hard put to find a big chunk of time for workouts so you’ll love the Fit Quickies and the food plan will help you too – I was stuck with some last few pounds and I wrote all about the solution in the Nutrition chapter of the Fit Quickies book. Be sure to go grab the free Chapter 1 and the Plant-Based Blueprint sampler today.
Thanks so much for your contribution to the conversation – it can feel like we’ll never succeed but I know that you will!
Lani
I have NO DOUBTS you can do it! It sounds like Fit Quickies was written for YOU (well…all of us, lol). Congrats on your 50 lbs…you should be very proud. You have come a long way, and definitely shouldn’t bang your head agains the wall. Our journeys are just that…journeys. You will get there….promise! Lani will lead you in the right direction. Happy, healthy New Year to you, Lakshmi!!
I forgot to add I hope it is the fitness I can improve to lose this weight. Since I am a 98% vegan for the last 6 months.
Lashmi, 2 things:
1) the activity can make a big difference for more reasons than we may realize – for one, just 5 minutes of movement restores willpower – it’s true! It’s in the Fit Quickies book.
2) Not all vegan diets are created equal. I’m betting it’s just a tweak or two that will make the difference for you.
Oops sorry Lakshmi I left the ‘k’ out of your name!
Lani
You have lost 50 lbs so far….WOW! You will definitely get to the rest…just have to play around with different options. If you believe, you will achieve. I belive in you!
Thank you both for the warm encouragement it has been a tough journey and I just really want it to be done but here goes on the last 30 lbs. Maybe I am not getting enough starch and or carbs. just finished reading the meal ideas got some ideas going to start with tomorrow.
I could polish up on all of the pillars, but definitely the mindset. It’s too easy for me to fall into the “this is just a short term diet” mindset trap!
Carissa, that is so true. I also am working on improving my mindset. For me, it can be easy to begin to sneak the “processed foods” back in, so I need that reminder of how much better I feel when I follow a whole foods, plant-based diet. Good Luck on the giveaway! Happy New Year
Exactly! It is all too easy for the processed junk to start making its way back into my diet. I guess it’s the “easy factor” and I need to have some good alternatives ready to go for when I need something quick & nutritious!
Carissa, you are so right – the difference between longterm success and aborted attempts is the big inner shift in attitude that you so well describe. Knowing these loopholes is half the challenge – you know what you’re working with!
Definitely! I’ve made good strides over the last year in reprogramming my mindset, but I know where my weak spots are!
I really need a mastery of mindset change. That one is a must!
Marcia, I hear that! When we get that piece together, everything else becomes possible!
I am with ya on that one. We CAN do it!!

Lani is awesome; always seems to know just what to say to make someone feel good about themselves and all the efforts they are making. Can hardly wait for her book to appear. I know it will have lots of great tips for achieving success. Looking forward to how she integrates the 3 pillars. It’s great that she has done all the research for us and distilled it in one place.
Congrats to everyone who has posted at PBJ. I’m thrilled to see more and more converts to the plant-strong lifestyle! And thanks to Lani for linking to the PBJ blog; it is new to me and I have now subscribed.
Karen, it is such a pleasure to meet you! I feel the same way about Lani…she truly is an inspiration…and a BIG motivator
I am looking forward to the book as well, as I think I could benefit tremendously from it.
Thank you for subscribing, I am truly honored! I have much to learn regarding this lifestyle, but I love to share the info as I learn it.
Have a happy, healthy NEW YEAR
Karen – so good to see you here too, but I don’t know which Karen you are! At the same time, thanks for your amazingly generous thoughts and words and you’ve made my morning!
And I’m glad to bring another resource across the radar for my readers – the way I see it, the more field of support and connection we can have, the better for our happy success.
Thank you – and come by and say hi so I know which Karen you are!
Lani
I could improve more on the food. I still go in and out of cravings for processed carbs and salt, like pretzels, chips… I could also stop eating after 8p!
Brigitte, I can totally relate. That had to be the thing I struggled with the most…processed foods. Salt, oil, and sugar…oh my! Lani’s recipes in her blueprint are awesome! Make sure to check out her blueprint sample! Happy, healthy New Year!
I could for sure improve on my fitness since I really don’t exercise at all.
I’m so not into it at all and can’t seem to motivate myself to do it. I still have about 15 pounds that I would like to lose that are not coming off with eating plant based alone. I know that if I could get motivated to exercise it would come off pretty easily. I feel great and have lost 32 pounds in the past year eating a plant based diet. Looking forward to trying to get motivated to exercise!
Jennifer, that is what I also want to focus on. I know I run, BUT that is all I do. I really feel Lani’s Fit Quickies will keep me motivated, since I know I have 5 minutes to spare. Good Luck, and Happy New Year
Jennifer,
Congrats on your amazing weight loss!
As for exercise, there’s a momentum to everything and it seems once we stop moving it can be challenging to get going again! It’s not your fault, we’re programmed to lazy to conserve energy!
Problem is, we don’t need to conserve it anymore – am I right? Start by walking for 10 minutes a day. Can you do that? Of course!
And work your way up from there to some muscle challenges – Fit Quickies are perfect for you!
And the real secret to why exercise helps us? It restores brain-power to making better choices. True story! I even have a chapter about Willpower workout in the Fit Quickies book!
Lani
The area that I am most looking forward to add to my lifestyle in 2013 is exercise. I have the food and mind set parts down pat.
I just started commuting 4 hours everyday and there is barely any time. Fitting in short periods of exercise seems very doable for me. This is why I am so interested in Lan’s new book.
Hi Gail!! That is also the area I need most improvement in. I am looking forward to reading Lani’s book, and it will help me tremendously in this area. I currently run, but I also need to work other areas of my body, so I am excited to read Fit Quickies.
Good luck to you, and Happy New Year!!
Gail – 4 hours a day/ Oh my gosh! Are you driving? Train?
If train, you can help things out by standing for a chunk of the way – really! I details this in Fit Quickies – sitting too much is not the same as exercising too little (I know, sounds confusing!) yet simply standing brings all kinds of intrinsic muscles into play and actually helps you in your health and weight quest.
You’ll love the 5 minute fitness idea! Thanks for coming by and do tell me about this commute when you get a chance!
Lani
Lani,
Thanks for your encouragement. My commute is mostly train and then subway. I typically stand for the subway portion, which is about 20 minutes to a 1/2 hour. Since I need to switch subways there are lots of stairs that need to be climbed to get where I need to go. I have also resolved to take at least a 10 minute walk each day during lunch. My goal is to get to a 1/2 hour. I am really looking forward your book to get the “quickies” that I can institute into my routine each morning and evening as well.
Thanks for all your inspiration. Looking forward to being with you on this journey.
Gail, sounds like you have got it going on! You climb the stairs and you stand on the subway, good work!
Love your enthusiasm. Did you already order your book? I think they may be coming out sooner than expected – I spoke with my publisher yesterday and she said there is a copy sitting in their office! That means soon….I haven’t even seen a copy yet!
Keep up the good work

I definitely need the mastery of mindset. Its so easy to slip-up, especially with voracious junk-food omnivores living under the same roof. My husband is partly on board, but with the step-kids, and all their junk food, i still slip-up even after celebrating my 1st anniversary just a few days ago!!!
I am with you on that one! Mindset is KEY! Good Luck, and Happy New Year
Hey Rugrat, being in a sea of omnivores does present its own challenges. You are so smart to stay connected with community such as PBJ! AND there are specific things you can do to increase your mental strength – I address these in the Fit Quickies book because it is that important for your success!

I have been working on the Plant-based lifestyle since August. I made it through Thanksgiving but have had a few set backs at Christmas. Now that the New Year is here, I am wanting to cleaan up my act. I believe the only thing I need to adjust is the mind set. I am working out and find that my energy levels have improved. My draw back is the mind set. and I feel that I can do this 100% if I can conquer this. I love your PBJ recipes very much.
Thank you!! I am hopefully going to be adding more recipes links soon, so keep eye out.
Way to go on beginning your plant-based journey. It id definitely a journey, as I am still learning something new EVERY DAY! Keep up the great work, and keep working on the “mind set”, as it truly is the first step (in my opinion) of getting and staying on track. So glad to hear your energy is improving..that is always a PLUS.
Mary Beth:
You are SO right about mindset! And keep in mind they ALL work together. Short fitness breaks a la Fit Quickies INCREASES your brain power, will power, and won’t power – you actually make it easier for yourself by doing just 3 – 5 minutes. The secret behind the secret of Fit Quickies.
Congrats on your success so far and don’t worry, everyone struggles during the holidays!
Cheers forward – Lani
For me I would say my mindset needs some work. Ok, a lot of work. Eating a PB lifestyle is a lot of work! I realize now that my past SAD is just laziness. Easy, processed foods were all I’ve fed my family. Changing everything about the way we eat has been difficult, and I’m the only one in the family on board. But I’ve read too much, and know to much to ever go back to slowly poisoning our family. Rome wasn’t built in a day, and I know I have a long road ahead of me, but my new years resolution is to keep going forward! Thanks so much for your support, tips and encouragement!
Dorcas, it totally seems so difficult (at first), because like you said…that is all we have “‘learned”. We just have to “re-learn”, and move forward. It sounds like you are on the right track, and staying focussed and positive will definitely help you succeed. Mindset is so important, as it can be easy to fall back into our “old way of learning”. Keep up the great work, as I truly believe YOU will inpire a lot of people, including your family, to make healthy changes in the future. Best of luck in the giveaway and in your plant-based journey. Keep us updated.
Dorcas – your post is FULL of insights. Thanks for sharing your thoughts and inspiration!
I would definitely say exercise – I know I need to do it, and I know that it makes me feel so much better when I do, I just need to get the body to get up and do it.
DITTO to that!! YOU CAN DO IT
It’s definitely fitness for me. I became vegan about 8 months ago, lost 25 pounds almost without trying! I love my veggies and don’t miss dairy at all (I was “mostly veg” for years) Getting into a regular exercise routine has been a different story. I’m 53, still overweight and have bad knees. Making myself get on that treadmill is a daily struggle!
Motivation is key..that is for sure. What mindset are you in? Get your mindset in the right place, and find that motivation, and keep that at the forefront as a frequent reminder to get on that DREADMILL, lol! Way to go on losing 25 lbs, you should be very proud. That is a huge accomplishment. If you can do that without any effort, just think what you can do by hopping on that treadmill, or following the “Fit Quickies”. Don’t lose focus…YOU CAN DO THIS
Terri,
Congratulations on these big changes and your success! It may be that treadmill is not the best option for you on a regular basis – you can do lots of things that don’t challenge the knees, too. You must feel great with that 25 lbs off – keep up the good work!
To your continued success!

For me it is definitely fitness. I love eating plant based, and I practice yoga and meditation. I already exercise by it’s not regular. I just turned 60 and found out that my bone density is not so good, so along with my healthy eating, I AM going to regularly go to the gym and do a balanced weight bearing and cardio workout 4 or 5 days a week.
That is wonderful!! Way to make a commitment. You should be very proud of your accomplishments so far
I cannot wait to hear about your progression. Keep up the great work, Judy!
Judy, it sounds to me like you are really understanding how important it is to prioritize healthy practices or we just don’t get the job done. 4 – 5 days a week at the gym is amazing! You go!
